In your blender (I use a Vitamix), combine the following ingredients as listed below:
1/2 c. coconut milk
1/2 c. nonfat Greek yogurt
3-4 slices pineapple
1/2 English cucumber (doesn't' have to be an English cuke!)
2 handfuls of ice
In your Vitamix, turn the machine on Setting 1 and Variable low. Slowly turn to Setting 10 and Variable high until well blended.
For those without a high power mixer, I would start with the soft ingredients first and then slowly add the cucumber and ice to the blender. My old blender did not blend the cucumber well unless I "dropped" the cucumbers in as I was mixing my smoothie.
And, this passed the "kid" test. My kids drank it, really they did! Pour and enjoy!
