Pina Colada Recipe

This is a slightly lightened version of the traditional Pina Colada recipe.  I'm not saying it's fat and calorie free, but it's a bit lighter due to the coconut and evaporated milks.  A great beverage for a hot backyard BBQ!  Enjoy! 

1/2 c. coconut cream
1/2 c. unsweetened coconut milk
1/4 cup non-fat evaporated milk
1 c. crushed pineapple
1/2 c. rum

Put all ingredients in the blender as listed above.  Blend on high.  Serves 4.
